Because there is no guarantee that the crew of the ship that he hijacks in the "Sisko dies early" timeline feel any compulsion to protect Kirk. They might well say, "F--- 'em. He screwed us over."

The crew will try to follow, but if the Sisko is not a Prophet, then no one is going to let them access the Orbs higher functions.
The wormhole aliens claim to be of Bajor and yet they allowed the Cardassians to subjugate the planet for 40 years and the Dominion to invade their space.
And Bajor was stronger for the experiences.
