The Sisko is Agressive, Adversarial.......he wants to end The Game...

For heck of it, say Ben and crew makes it back BEFORE the Dominion takes down the minefield (how many times was THAT mentioned?) and before Rom disables weapons....what does he do...take on the station? Stay out of weapons range hoping for super-quick reinforcements?

Unload the nosecone, chucked full of Quantum Torpedoes trying to destroy the station-would that have been a viable option?
He told prophets he was willing to die to save the AQ, so I'm guessin' he'd be willing to take on DS9 (and perhaps kill Jake, Kira, and the remainder of his crew left aboard)

Attacking the emitter pointed at the mine field of course. And if necessary, ramming the Defiant into it.

Collapse the wormhole itself maybe? I'm sure the mines could have been programmed to not destroy Federation ships.

On its own the Defiant and without the element of surprise it doesn't have the power to overwhelm DS9's defences and take down its deflector and stop the Dominion from continuing to take down the minefield. Getting close enough to ram would be difficult given it is the only ship and DS9 can concentrate its firepower on it. Plus we've seen the shields around the core of DS9 easily shrug off the impact of a ship before. It might not have been a "ramming speed" but how often did we see anything survive having a ship crash into it?

Not an option given what happened before the war when they declared the wormhole uncollapsible. I'm not so sure they could have been reprogrammed in the heat of battle.

The best option would probably be to attack the minefield. The process of disabling the field meant they couldn't destroy the mines until all the mines' replicators were disabled, so if you start destroying mines before the process is done fully capable mines will start appearing again. Of course you would hope that you don't accidentally destroy the only active mines with the first shot.
