Prime universe Stargazer-A, perhaps?
a lot of classic 24th Century decals. I'm going to chalk these up to Doug Drexler and the Okudas.
What ever these are, they're on Voyager and other Sternbach designs. Might also be on the Ent-E but I'm not sure.

Mystery ship LCARS console
Looks really cool, but kinda going against the TNG more advanced = more simple aesthetic in favour of visual interest. Which in truth I'd probably do the same. Rule of cool and all that.

Interesting color pallet choice for a updated LCARS.

That's a pretty looking LCARS interface. They've picked some nice colours.
I would too. I find the increased detail very pleasing. It's the same but also a tad more realistic.
I just had a random thought: I wonder if the ship is actually the U.S.S. Verity, Admiral Picard's command during the Romulan rescue mission. In the novels and comics, it's a Odyssey-class (Enterprise-F from Star Trek Online) ship, but in live-action they could make it anything.
I doubt they feel the need to reference a comic tie-in that only a handful of people read, relatively speaking.
My Occam's Razor tells me it's a new Stargazer. It certainly isn't a new Enterprise.
Either that, or it's a ship from the Lost Years that Picard served on when he was younger (maybe the Reliant-A?) and after the third season PIC is going to morph into ST: The Young Picard Chronicles?

USS Pasteur (Beverly's ship just a different design)
USS Challenger (LaForge's ship but not a galaxy class)
or USS Verity
Yeah I also think the La Sirena ain't going to make it to the third season, and based on something Patrick Stewart said in the SFX interview, I don't think all the cast from seasons 1 & 2 are going to be in season 3.

According to reports (rumors....), Rios and the La Sirena gang are not in S3.
That's a very shiny floor for a 24th century starship.
