Aside from VOY did any human female take command in ENT or TNG or DS9. I think I can remember Crusher doing night duty in TNG once. And I know there were female captains of other ships.

Crusher commanded the bridge in "Descent" and "Thine Own Self." Troi also stood a bridge watch at the end of "Thine Own Self," though this was only described, not shown. (She's half-human, so I'm counting her.)

Hoshi Sato commanded the bridge in "Terra Prime."

Limiting it to human females is rather unfair in DS9's case, since it never had a human female as a regular. Kira and Dax were both repeatedly shown in command positions.
 
If it is expensive to store such a vast data set, there would be companies selling this service to the rich, much like the ones that currently sell cryogenic freezer services to the wildly optimistic rich of today.

But... but... they don't use money! :p

So selectively editing one part of the pattern while leaving the rest unaltered should be easy for a transporter.
For the transporter, perhaps. For the transporter operator, not quite that easy: the more "advanced" modifications listed above were accidents beyond the control of the heroes.

Rendering a gun inert can be done pretty violently; for all we know, the gun will then never fire again.

If the timing is right, it might be easier for the operator to simply omit the part of the envelope that contains the projectile, disruptor ray, or whatever.

That's internal consistency, I guess: the ship never had female security personnel in evidence previously, so these were probably drafted from Scotty's or Spock's department rather than Giotto's.

All four of those faces resemble Nurse Chapel in her animated form. The details are different, jawlines and freckles and so forth, but the eyes nose and mouth are almost identical, as if drawn from a single model or template. Probably made it easier to animate, as they just have to switch out mouth movements.

The could probably use the Transporter to clone her. That damn machine does just about everything else in TAS!

You say "come on" to that? The idea of the transporter turning adults into children was patently absurd. The grating part was the usual TNG techno-babble created to justify any of it. I've seen 1940s cartoons with a greater sense of realism than the "Rascals" transported plot.
 
Looking at the transcript, some weird unknown energy field appears to have selectively prevented the Transporter from beaming in the full genetic code of the Transportees. I don't care for the explanation myself, but the Transporter does have a precedent as an aging or de-aging machine at least.

I only mentioned that as the first instance. The transporter has been doing magic ever since.

in regard to the primary ship, Enterprise: Cmdr Shelby commanded either the saucer section or battle section, can't remember which in BoBW ... Troi commanded during Disaster ... and I believe Dr Crusher was in command for short stints while Picard was off the bridge in FC. Different Enterprise but Rachel Garrett in Yesterday's Enterprise.

Other ships ... Beverly Picard commanded her own medical ship ... Erika Benteen commanded the USS Lakota in Paradise Lost.

Extend it to non-Starfleet ships and semi-regular characters (because DS9 was more fluid in it's depiction of things anyway, and because SantaSpock/CommishSleer never actually asked for only regular characters specifically :p), and we can probably count Kassidy Yates as a strong female character in a command role. Though we didn't really see her do it much.

I think the biggest hurdle for me with the good and evil Kirk, or turning adults into kids or the creation of Tuvix is the mass? Where does the extra mass come from or go to?

It isn't so big a hurdle to keep me from enjoying the drama (the scripts from "Rascals" and "Tuvix" do that), but it is a head scratcher.
