The last Trek movie with a standout VFX sequence

Nemesis - Nope, nothing special there.
I think the VFX in Nemesis were top notch, and would hold up today.

Nemesis - loved the head-on crash (all CGI, wow!!!). Shame the rest of the movie leading and after it is so
So, the collision scene in Nemesis actually used a miniature/model(for the Enterprise). That might be why it looks so good. There are, of course, layers of digital debris flying around.

Agreed, mostly, the Enterprise looks great and the end battle still rocks for me, I like the assassination scene too, the FX is very good here. There's the odd bit that dates it, like the Scorpion fighter scene but ironically as the film wasn't particularly ambitious it didn't bite off more than it could chew, unlike that other 2002 film Attack of the Clones.
