The joystick controller on the Enterprise-E

What sort of controls do submarines use? It should have been some sort of similar control station that opened up out of the wall instead of a joystick that Jonathan Frakes had to wrench his back to use.

I never got how they were supposed to do elaborate maneuvers in 3D space (Shuttles, Voyager and the Defiant move like fighter jets at times) just using a 2D keyboard. A stick makes more sense. In space, a 6 DOF control would make the most sense.
How do people that use keyboards to play games do it? Not quite the same thing, sure, but it's not outside the realm of possibility; especially if a lot of it's macroed commands or preprogrammed flight patterns. Setting course for Vulcan could be a simple as: Dropdown menu...planets...Federation...Vulcan...Warp 7...Click Ok

People also drive cars in games with up, down, left, right arrow and spacebar. You certainly don't want people to do that in real life.

Warping could indeed be that simple, as any autopilot. But the other manual maneuvers that we see them do in shuttles, the Defiant, etc... no.

Only in TMP. After that it was eliminated as "unrealistic" or some such. Of course, JJ brought it back in the NuVerse.

I never noticed it was gone in the other movies!
Not surprising. Helm is one of the few control surfaces on the Bridge not receiving much notice after TMP. They removed the hand operated "gas pedal" and no one noticed, because they weren't shown.

I can remember several shots of the helm console over the next couple of movies, it just never stood out to me that the throttle was missing. Guess it shows how observant I am!

EDIT: Looking at the screen caps, I believe it is still there (at least in STIII). It just looks like the took the black handle off of it.

IIRC, the NX-01 helm featured a hybrid stick/yoke control setup.
Finally found an image of the helm console. (Click to enlarge.) Thank you, Memory Alpha!

You can see the stick/yoke on the far right. My guess is that portion of the console is for manual control when Enterprise is at sublight speeds, and the stuff on the far left is for astrogation.

It's there in III, Sulu's hand is on it when Enterprise warps away from Spacedock.
