The Excelsior class isn't as beautiful as people think it is

I don't hate the Ambassador but it just kinda feels 'forced' like they were trying too hard to mate the Exc-class Ent-B with the Gal-class Ent-D for a design evolution.

It's not bad or anything, just not organic in structure IMHO.

Sidebar, did we see many or any Ambassador class ships in the Dominion War?

To me, the Intrepid class looks like the business end of a shovel.

My very reaction to the Voyager.
The "super runabout" design that was rejected (NCC-73602) would have worked for me:

And don't get me started on that Stewie Griffin clone called the Galaxy class.
I think the Galaxy-class was appropriate to its time, but that time passed after only a few years, IMO.

I agree with Xerxes1979 about Excelsior having that one best first-look beauty shot. That's why ILM filmed it at that very angle for the reveal. I like that design for its bold move to go in another direction design-wise. But yeah, it has a lot of ugly parts when seen from certain views. IMO the Constitution-class refit is the winner as far as beautiful/sexy goes.

In 1987 after seeing the Galaxy-class design for the first time on an Entertainment Tonight exclusive, I was shocked. It was SO odd and weird and different. I think I took a long bike ride and a cold shower later just to get over my initial reaction and disappointment. Maybe a week later ET did yet another "first look" spot on TNG, and they showed the Galaxy-class filming model being photographed from the aft. I thought the ship looked cool at that angle with the upward arcing thick dorsal section and organic secondary hull. After that moment, I decided I wouldn't hate the design. Also, after seeing a side-view schematic of the ship, I started to love it. I've never liked it from the usual beauty shot of quarter view seen under saucer from the front.
