Would that female operator have been able to see Spock's gesture, above and behind her head?

Just asking. The director or the actor might well have intended the gesture to be aimed at the female extra, even if this couldn't work out in practice. But if it's indeed impossible, then it would be all the more fun to go for the more futuristic and perhaps aesthetically more pleasing explanation of handwaving-controlled interfaces.

...And if we do that, we could also say that Gary's flamboyant backhand-slap was more than just him showing his cool. It could have been his patented "see me physically flip this switch while simultaneously activating these other circuits by the handwave" maneuver...

Well, presumably she would've turned her head enough to see his cues. And even without turning her head, I think she could've seen the movement in her peripheral vision, based on where he was standing. Maybe that's why his gesture was so exaggerated, in fact.

Sure. Directorial intent is one thing; what's evident in the final product is another. The episode itself gives the impression of gestural control, and I'd call that a serendipitous result rather than an error.
 
That's very cool; I'd never seen that photo. Viewing the scene in that context, Spock now reminds me of several bosses I've had.

And he was just a lowly lieutenant at the time. Apparently, Spock was the Dwight Schrute of Pike's Enterprise (and I don't ebven like The Office).
