Why does she not look like the other Nightsisters?

So, going by Wookieepedia for whatever that's worth, I guess the reason is that some Nightsisters are actually human, while others are Dathomirian?

There was a story written by E. Anne Convery (Filoni's wife) about a human that was adopted by a nightsister.
