I am kinda curious how Earth/humanity developed in the future of the SG-1verse.
But in terms of catching new viewers, I think there's way too much backstory to not do a reboot.

There's that word again; "need". What's "need" got to do with anything?
It's not a matter of necessity, it's a matter of what kind of story the new creatives want to tell. If they want to tell a continuation, then that's what they'll do. If they don't, then they won't. It's really that simple.
Is it possible to tell a continuation? Sure. Was there any massive lingering plot thread that could do with a resolution? Kinda. Are they going to pick up on that? Maybe, but probably not. Does a reboot present greater creative possibilities and be more accessible to new viewers? Arguably.

I don't know, I kinda liked how by SGU it had all kind of been normalised and established. Made the universe feel more lived in and dynamic even though the show itself wasn't in the milky-way all that much. Though ostensibly meant to be a 'present day' show, it reads more like a near future, or (more accurately) an alternate present. Another thing I liked about SGU was how most of the external peril was from just how inherently dangerous space is in a survival scenario. Radiation is an actual hazard. Food and water are precious resources. It didn't always depend on some scenery chewing comic book villain in mythological cosplay.
Personally as much as I love SG-1 in all of it charming goofiness, I'd find a reboot more interesting if they leaned more into that SGU style hard sci-fi approach (sans the overabundance of personal drama) the the more pulpy adventure style of the original.
Like what if the galaxy *isn't* populated by millions of humans, and the civilization that created the gates are long gone. The galaxy is mostly empty (so you don't need to dance around everyone magically speaking English) and filled with the abandoned wonders of a type-2 civilization. The only immediate threats (aside from environmental) being the still active security systems on some of the more formerly developed worlds, and just a general "we're primitive monkeys screwing with a nuclear reactor" hazard of having little to no clue how any of it works. So 'The Expanse' meets 'Mass Effect: Andromeda'. Kinda.
