I think its because the more flexible canon of Star Wars than the stiff Trek one that discounts practically everything.
The SW encyclopedia includes material from the Extended universe, though. That adds quite a bit of material, although it may be debated as to how well it fits.
Okay, I gotcha. An encyclopedia like this can be mroe useful because it cobbles together source material from a diverse collection of locations.
