You know, it would actually be quite awesome if there was another "Han Shot First" moment in Episode VII.

Vader totally had Force Lightning on his finger tips and Han was reacting to that. Or rather, that's how it'll go in the next special edition.

I wonder, was that ability to deflect laser blasts with one's hands ever seen again, perhaps on TCW or somewhere else? And was it something only the Sith were capable of? Because it definitely seems like it would have come in handy for the Jedi at several points as well.

It's a similar skill to what Yoda used to deflect Force Lightning.

You're right, though. ;) It's explained in the Star Wars Visual Dictionary from 2006. Only Sith Lords with organic limbs can conjure and throw bolts of lightning.

I have a feeling that it might still be canon. It was written right alongside Lucasfilm, and contains George Lucas's story for Plagueis.

That's my take as well. And even if it's not, I like it enough to consider it the official backstory for Plagueis and Palpatine.

With JJ Abrams in the director's chair, I'd put money on it. Remember, he's not just a Star Wars fan, he's also a Spielberg fan. Specifically... ;)

I know it's EU and thus non-canon, but I think Corran Horn had the same ability. It had to do with absorbing and redirecting energy and IIRC it was considered a rare talent. Also, there's this. Plus, as someone pointed out Yoda could deflect, absorb and redirect force lightning.

I think the EU claimed it was more absorption of some kind - and Corran Horn had a similar force ability.

How closely did you work with Lucas Licensing on Darth Plagueis? How much did George get involved? What advice did he give you?

George was involved in the early stages. When the book was first proposed, I wrote to him and asked whether there was any reason why Plagueis couldn't be a non-human, and he wrote back that Plagueis could be a Muun and sent me some artist renderings of the character. From that point on, everything was approved, as they're saying, “at the highest level.” I worked most closely with George's right-hand man at Lucas licensing, Howard Roffman. It was a strange way to go about the book, because I kind of had to bypass both Del Rey and the usual editorial staff at Lucasfilm and work directly with Howard over the course of what amounted to about a year of preparation.

I submitted many, many versions of the outline until we finally reached consensus on where we wanted to go with the book. The marketing text about “this is canon at the highest level” – I suppose that's true, that a lot of the stuff came from the very top levels of Lucasfilm. Everything was approved at that high level. I had to make the assumption that Howard was speaking directly with George about a lot of this stuff. I didn't have any meetings directly with George, but it seemed like a lot of the approval was coming through him to Howard. I was not privy to all of the things that happened behind the scenes.

As interesting as all that is, it doesn't matter. Disney now owns the franchise, making them the ones calling the shots. If they say it's not canon, it's not canon. And they have specified that from now on Star Wars canon is only the six movies and the Clone Wars plus the upcoming Rebels series and all upcoming movies.

Technically, yes. But Disney is doing the same thing with Lucasfilm that they are doing with Marvel... they are letting a producer call many of the shots creatively, and the umbrella company will tend to have have input in the broadest sense, as it realizes that autonomy is so important to keep the creativity at peak levels. With Marvel, Kevin Feige is the producer in charge. He has much of the say in what happens, and usually his decisions will stand. Disney may overrule him at certain times (like the release date for Cap3) but those are exceptions, not the norm.

With Lucasfilm, it's Kathleen Kennedy, one of the great producers of blockbusters in the 80's. She has been trusted to ensure the integrity of the franchise and its characters and was Lucas' hand-picked successor. If Lucas told her that Plagues should be referenced or used, she will probably use him.
