One of the points of punctuation is to replicate the pauses and emphases of spoken language in written forms. A colon is "pronounced" as a pause and is slightly longer than a comma pause.

Star Trek (pause) The Next Generation

(wrestles inner Pedant back into box)
Never wrestle your pedant into a box in my company, please. I am one through and through.

I guess I just never really thought of it in a verbal sense. I use them in writing. And I would likely have a pause in a sentence structure.

I just never have with this. It could just be a learnt habit. Or it could be it just sounds a bit ostentatious in conversation.

Actually I just thought... to the pausers. Would you say "Star Trek: [pause] Voyager."

I told you this topic would be heady...

I try to avoid talking about Voyager (ducks) but if I were saying "Star Trek: Voyager", I would have a pause.
.

It occurs to me to wonder how the brackets in "Star Trek (2009)" are pronounced... Does one turn one's head slightly as though making a stage aside?

TNG or the full five words without stop or emphasis. Certainly not like those teasers that went with "Staaaaaaaaaaaaaaaaaaaar Trek, The Next Generation", but that use of theatrics was technically meant to build up excitement for the following week. Ironically, the TNG teasers after season 4, where some nimble retooling made for some of the greatest teasers ever for the show's run, sometimes ended up feeling far more exciting than the actual episodes in the latter half of TNG's run!

How do you say Star Trek: The Next Generation?

I ask this because the original trailers back in season one always had a pause where the colon is then put emphasis on the word Next.
That's a pretty standard place to put a pause & ensuing emphasis, from a narrative point of view. So yeah, I do lol.

Yes. Granted, like with the other brief, single word follow-ups, it's a shorter one. The ones that follow-up with "The" read more formally, like Star Trek: The Animated Series, or any of the films. Do you spout all those titles without pause?
