Actually, I heard his name when he graduated from Starfleet Academy: "Spock Esteban Francisco Juan Pablo Sarekson-Grayson".

It seems as though his mother is half Spanish. When Spock was born, she ws attempting to re-connect with her mother's side of the family.

If I remember correctly. In one of TOS episodes or movies. Someone ask Spock does he have a first name. Spock reply yes but you won't be able to pronounce it or yes but it unpronounceable to humans. Something like that.
