In which episodes did Spock spend significant time in the command chair? The Tholian Web comes to mind, but I have not scoured Trekcore to look at the screencaps, a time consuming effort right now.

He spent two months in command in "The Paradise Syndrome."
Not an episode, but he was in command of the Enterprise for probably the majority of The Undiscovered Country.
You could trust Spock's judgement not to get you killed at least!

"Journey To Babel" as well (arguably depending on one's definition of "significant time" is, though it was surely an important plot point).

That said, I always liked Spock's "command performance" in "that which survives", something about how sarcastic and snotty he acted towards Scotty. I don't know why I like that so much, though my wife has a theory...
