Something like LOTR

For a single book-
The Once and Future King- T S White
To clarify, this isn't a one-shot. Four books were published in White's lifetime, and a fifth posthumously.

Most of the books which have been reccommended here aren't 'one-shots' either; most of them are series starters, but they've still been reccommended because it's really hard to find Tolkien-esque fantasy that is standalone.

Yes, but the poster I quoted from listed it as a one-shot.
 
Inversions by Iain M. Banks; it is actually sci-fi and part of a much, much wider universe, but alien technology seems like supernatural sorcery to the inhabitants of a planet in a Medieval style era.

Even Tolkien isn't standalone, after all. While he intended the books to be a single publication, it was actually published as three separate volumes - following his publication of The Hobbit. So it's actually a sequel.
