So how important is canon, then?

This is called slippery slope.

In both directions. Once you decide that changing continuity is OK, they you can change anything you want. And again, I have no issue with that. Just don't call it Star Trek. Matter of fact, The Orville is a title that soon won't be used for anything else ;)
 
Sometimes I watch the TNG DVD’s rather than the Blu Ray. Because that’s how it’s ‘supposed’ to look.

Rarely do I like to look in a mirror.
 
I think it'll allow some unique story possibilities when Strange New Worlds introduces Spock's human brother, Amanda's son from her first marriage, Robert Grayson. I'm hoping he's a civilian trade official so all the faceless people doing the behind the scenes work back on Earth keeping it a utopia get some coverage. It's a throwback episode to TOS issue episodes like "Let that be your last battlefield" and Robert was caught in some anomaly that alters Y chromosomes to X. He's alternately changing gender from male to female and needs his brother Spock's help. A set of male/female twins could play Robert as we explore how this type of random occurrence is challenging for a random individual to deal with but could benefit people who want to transition to alternate genders but does Robert want to be a lab rat. Probably not, who does. But Spock councils and says "Brother, sometimes logic is not the only way. What does your heart say."

For the canon/continuity purists the SNW show needs to reveal another never heard of Spock sibling or it is not my Trek!
A conversation I now wish had happened in TAS Yesteryear after grown-up Spock introduced himself as Cousin Selek. Have child Spock ask "why have I never heard of Cousin Selek before?" Sarek then answers "you have many relatives you've never heard of before. Indeed, even I can't keep track of all your siblings and cousins."
 
Like it or not, Short Treks and Picard show us the Discovery/Strange New Worlds verison of the ship AS the TOS Enterprise when if they wanted they could have used the authentic 1960's look. The old has been swapped out and replaced.:shrug:

To piggyback on a comment I've made elsewhere, for instance, just how many previously unheard of siblings does Spock have? And we're supposed to believe that this has never come up in decades of relationships? I don't buy it.

That's one of the things I actually don't mind. Kirk and McCoy didn't know Spock had a fiance until they met her, didn't know Spocks parents AS they were meeting them, didn't know about his half brother after decades of being his best friends...that's just Spocks way.

Though for some reason they turned Yeoman Colt into an alien.

Wait, what?

They just gave it an upgrade and a new paint job. As you said, Kirk's adventures still exist. They just have non static screens now.

"Upgrade" being subjective...

The spiky faced alien on the bridge of the Enterprise in Such Sweet Sorrow is confirmed by Michelle Paradise to be Yeoman Colt. Though, hardly anyone else will acknowledge it. Memory Alpha lists her as a separate character also named Yeoman Colt, while the Disco novel The Enterprise War tries to dance around the matter with a vague reference to Colt having "changed a great deal" since the Talos mission.

I like the idea of Spock being the son of the Vulcan ambassador to the UFP, the nephew of the President of the UFP and the god son of Darth Vader.....oops wrong franchise
Why not go all the way? Juanita Martinez, Spock's egg donor, Devya Bhandari, the surrogate mother, T'Lait, his wetnurse, and Uncle Hot Tub Johnny, for the year Sarek lived separately on Betazed.
