So Did Any Bajorans Survive the New Bajor Incidient

I would have loved to see our heroes rescuing some survivors from a Dominion Interment Camp
 
That would've been a nice nod to previous episodes, but I suspect the colonists fought to the last person--they are known for facing off against impossible odds.
 
Also, considering the Dominion were out to make a statement, they may have gone out of their way to make sure every last person was dead.
 
It's possible if there were any survivors there may have been stipulations in the Treaty of Bajor (the treaty that ended the dominion war), to have them and any other Federation Alliance prisoners still in the GQ, returned.
 
It is also possible the Jem'Hadar were full of it in their titular episode, attributing all the MIA cases they found in UFP and Bajoran archives to their own heroic acts of slaughter, when in fact they never laid a polaron beam on USS Maryland which returned safe and sound a few weeks later.

Possibly they also took credit for the fact that local poisonous flora had killed all the people of New Bajor?

Starfleet does continue to enjoy some limited access to Gamma after the Jem'Hadar make this claim. But perhaps they believe in the propaganda and never go to check on the colony?

Knowing the Dominion MO it's quite possible some Bajorans survived. The Dominion uses prisoners of war as an opportunity for psychological intel.
