Simple meals you enjoy

I have just diced up some potatoes and am waiting for the dishwasher to finish up so i can use a pot (yeah.. i'm lazy. Could've washed it by hand and get going sooner.. sue me :p).

I'll be cooking spinach (with a little garlic in it) with potatoes and some scrambled eggs. Pretty basic, anyone can do it but i so love it.

What's your favorite, simple dish that can be cooked in about 10-30 minutes?
 
Though I say so myself, I make a mean macaroni with cheese sauce. I make the pasta and sauce fresh and can just about make it from start to finish in half an hour, though the fresh pasta is better if allowed to air-dry for a little while. Once you've made it from scratch you can't go back to the store-bought stuff. :)
 
I like taking a chicken breast and cut it in half and then into 1" pieces and bread then fry...I also usually make a simple dip or sauce to mix it up in...like a sweet & spicy sauce. Steam up some veggies and got a nice little dish. :)
 
Cornbead muffins and a can of BBQ-baked beans.

Or of if it's a really cold day: A grilled-cheese sandwich and a can of Campbell's tomato soup
 
An easy meal when my wife and I are feeling no effort to actually cook is to just brown some ground beef, put it over rice and add some gravy (and hot sauce, in my case).
 
Hmm..I have to say actually 99% of all meals I cook are simple... and I enjoy all of them...unless an experiment goes wrong. ;)

Very simple: Jacked potates with spring quark.

I ate spiders and pill bugs out of a stump when I was a teenager as a demonstration of coolness to my audience of younger kids. That was a fairly simple meal.

Potatoes and zuchhini (fried) and perhaps some cooked spinnich is kind of typical for me. I have never cooked anything that would in any way qualify as interesting. I just chop and fry whatever vegetables and other loot I can find.
 
A wonderful mixed salad: Lettuce, corn salad, radicchio, tomatoes, carrots, mozzarella cheese, maybe some onion or bell pepper, seasoned with salt, pepper, olive oil and balsamic vinegar. Simply awesome.

I'm also partial to panini: one of my favourite is a roll of Italian bread, mayonnaise, prosciutto, fontina cheese, lettuce, fresh mushrooms. Yum.
 
Beans on toast - I learned to appreciate that when I was in England. Nowadays I use some non-English ingredients to prepare it like soy sauce and Indian spices, but it's really a very simple dish which brings a lot of bliss.
