Simple meals you enjoy

I suppose it's potatoes in the skin with fresh curd cheese (Pellkartoffeln mit Quark). There doesn't seem to be an adequate translation for Quark.
 
Bruschetta - sourdough bread toasted on both sides and spread with sundried tomato paste, topped with freshly chopped cherry tomatoes, sweet basil leaves, chopped green and black olives, and drizzled with a few drops of lemon olive oil and black pepper.
 
Cheeseburger pasta (kind of a ripoff of Hamburger Helper, but without their kit as a starting point): brown beef and season with whatever you like (I use onions, bell pepper, garlic, cayenne). Drain fat and return to skillet. Stir in 2 cups egg noodles, a can of condensed tomato soup, a can of condensed cheese soup, and 1 and 1/2 cups of milk. Bring to a boil then simmer until the noodles are soft. I also stir in some shredded cheddar and Tobasco.
 
Very simple: Jacked potates with spring quark.

If I'm feeling unimaginative, and don't want to cook something interesting, a few easy standbys:

- big pot of soup: fun & easy to make, can add whatever seems right and very warming in autumn/winter.
- a good shop-bought pie (not ones with poor quality meat), baked beans and a bit of cheese
- ploughman's & a beer
- a good steak, medium-rare
- cheese omelette with a green salad

Of course, if I'm feeling REALLY lazy, I'll just get a takeaway (fish & chips or pizza, usually)
 
Cheesey Hash:

Combine half a diced onion with a can of corned beef hash (1/4 IF it's a large onion). Cook until it it starts to brown a bit (and drives some of the over abundant moisture out). Break up a slice of sandwich cheese and stir in. Heat until cheese is melted. Top with another slice of cheese. Add fresh ground pepper to taste when served.

I've become a big fan of buying whole black peppercorns and grinding them over my food as I'm ready to start eating it. It smells SO good!

Option for variety: Add half of a can of diced tomato OR canned tomato/green chilies with first slice of cheese. Add remainder of tomato or tomato/chilies with second slice of cheese (will require additional heating). If you used the diced tomatoes that include green chillies the fresh black pepper might be a bit redundant.
 
I have a lot ... I particularly like slicing up turkey sausage (we usually keep the Hillshire Farms brand around - the turkey sort is actually lower fat than the stuff labeled "Lite"), and sauteeing it in olive oil with onions and bell peppers, and maybe some sliced mushrooms if I've got 'em. A bit of basil and some pepper, and in about 5 minutes I have a yummy, healthy meal. Mmmmm.
 
Pretty much all of my meals are fairly simple - I don't have a sophisticated palette and it really only takes some good meat and potatoes to please me. I also eat a lot of boxed dinners - Velveeta, Hamburger Helper, Kraft Thick & Creamy Mac and Cheese, Stove Top Stuffing, etc. I also enjoy making some simple grilled cheese with some Campbell's soup. If you open any Kraft or Betty Crocker cookbook I've probably made a majority of the recipes, and they are all fairly simple to execute and leave out the fancy expensive ingredients.

Actually it's a lot harder for me to think of a complex dish I enjoy. In terms of prep time I guess meatloaf, lasagna, and enchiladas are the ones that take me the longest.
 
Meatloaf! You have it one night and enjoy it for lunch the next day! Great with mashed potatoes!
Just as long as you don't reheat it. There's nothing worse than reheated Meat Loaf.

A wonderful mixed salad: Lettuce, corn salad, radicchio, tomatoes, carrots, mozzarella cheese, maybe some onion or bell pepper, seasoned with salt, pepper, olive oil and balsamic vinegar. Simply awesome.
Same for me with one exception, no cheese but with cucumber.
 
1) Rice! All kinds of it: Rice with canned tuna, rice with peppers and carrots, rice with little strips of boiled turkey etc.

2) Greek salad: Tomato, cucumber, green pepper, a couple of olives, a some feta cheese, a spoon of olive oil, salt and oregano. Pure heaven (especially on those hot summer days)!

3) A nice, thin steak can also be cooked in about half an hour. I like mine cooked in a pan with no olive but only water. They are juicy and yummy.

I like cucumbers in my salad, but they are not part of my usual menu, so I customarily forget them.

Oh dear, yes. I love Greek salad.

I make the taters with extra red pepper flakes, and then I stir in the corn :D

penne pasta with sauce on it
 
Elbow macaroni with a can of (undiluted) tomato soup and crumbled bacon. Salt and pepper to taste. Yum!
