But she's (Mara Jade) never been in a movie or series.
That's correct...although the Thrawn trilogy attempted to put her in Jabba's palace in order to assassinate Luke.
No possibility of luring JEJ to do the series? For old times' sake?I think the only real problem would be Vader. JEJ's voice is fairly hard to duplicate.
Seeing the rebirth of the Jedi in a post-Return of the Jedi series opens up far more possibilities for iconic lightsaber wielding action.
Personally, I'd like to see the next TV series be post-Return of the Jedi.

There's such a wide possible canvas...
...where we can have stories where you know the actual outcome of events isn't already mapped out for us.
Yes, absolutely, though I think it would do better without Luke and Leia and focus on other characters like Han Solo's adventures. Heck, you could make a whole series around his adventures if that fan vid is any proof. You could also make a Bounty Hunter show. Or even a miniseries set after the original trilogy using the Thrawn characters.
Oh ye of little faith (and imagination)! The core dramatic conflict of Star Wars for me is this (and I don't care how Lucas is trying to sabotage it either): the galaxy is constantly trying to achieve balance between the light and dark sides of the Force. If you wipe out all the Sith, the galaxy senses a lack of Sith and will try to create more - targetting any Force user who is handy. If all the Jedi and Sith have been wiped out, leaving a couple of neophytes named Luke and Leia, guess who has a bullseye on their backs?Nah. The Empire is gone, Vader's gone. You can't follow that. Game over.
