Like it or not, it's a fact that the current Star Wars franchise is largely focused on the prequel era. There are some exceptions such as some of the books and comics (and of course the toys are still from both trilogies as well as CW), but overall Lucasfilm's stuff has largely focused toward promoting the prequels and clone wars.
However, the fanfilm Solo Adventures has proven there is demand for the adventures of the original trilogy characters.
Sure, previous OT toons-Holiday special, Droids and Ewoks-haven't been that great, but there certainly is potential.
Continuity with some of the spots established in the EU might be an issue with some fans and authors, as it has been with Clone Wars. But I'm suprised there really hasn't been a lot of EU linking ANH and ESB, with the exception of stuff published between the films. Even then, a lot of that is mostly extremely dated (Such as the Marvel comics).
The ESB/ROTJ divide is covered by Shadows of the Empire more or less, but I think Star Wars needs Han and not some knock-off character like "Dash Rendar". I notice that frequently on message boards there has been demand for a Shadows CG project of some kind.
Animation and voice acting also covers aging if they follow-up ROTJ. Mark Hammil of course is a gifted voice actor, although there are a few good Luke soundalikes such as Bob Bergen. Harrison Ford is pretty much covered by the guy who did Solo Adventures (Since it's unlikely we'd see Harrison return in any capacity). I'm sure plenty of people could voice Leia. Anthony Daniels is always up for Threepio. Billy Dee Williams has reprised Lando for some of the games, but he doesn't really sound that much like he used to.
I think the only real problem would be Vader. JEJ's voice is fairly hard to duplicate. I don't think Lucasarts has ever got it quite right in their games.
