I actually love the idea of making this a Kelvin-verse prequel.

If they were really bold, in a future season, they could have audiences see what the actual Prime version of the Klingon war would have looked like. See the prime versions of these characters in the Cage uniforms with TOS tech.

Or perhaps have a character crossover between the universes.

Shame Star Trek Beyond bombed at the box office. If it did well, I guarantee they would want to market this show as the same universe as the JJ films.

I'm not ruling it out totally, but unless there's a specific reason why they'd need to show one, I would think they wouldn't want to overshadow their own titular ship by showing another ship that has nothing to do with the story they're trying to tell.
 
How about refit Constitution class ships? The Enterprise can't be the first and only one to get the upgrade treatment, and its a perfectly acceptable timeless design, passable for advanced by today's standards.

It's heavily implied that the Enterprise is the first of her kind in TMP, with all the talk of redesigning and untested, glitchy systems that next to no one in Starfleet was trained to use. If they'd been churning out that style of ship for fifteen years, all the brand new ship talk doesn't make sense.
