Ship continuity.

I'm not sure it's worth worrying why the Constitution class would disappear, or why the E-A would not be repaired. The one thing we knew for certain about that class was that it was a small one, with only a dozen keels to its name. This is not known about most classes - there might have been five hundred Intrepids or Defiants and sixty Galaxies for all we know.

So when there are losses, the Constitution class just dwindles to nothing. And when there are few survivors, it's logistically unwise to let them survive, let alone dedicate resources to repairing damage that might not really be major in itself.

So the Constitution probably disappears because there are no more Constitutions. The Miranda doesn't disappear because there still are quite a few Mirandas, making it logistically more sensible to build yet another batch (if nothing better in that category is available yet) and to keep the older survivors alive.
