Yeah I agree they will show the Enterprise - as a sop to us (and will have planned this from early on to try to get ratings back up, in case the show turned out to be in trouble). As it is, I don't think the Enterprise is required to satisfy the fans (since the show hasn't bombed) but they will show it, and as I and others above have said, there will be minimal exposition. At most a voice transmission from Pike in terms of "internal stuff" but they'll likely reveal the new-design Connie saving the day with a surprisingly large barrage against the Klingons.
Plus in terms of future "escaping corners the writers have got themselves into": I think they'll abandon hologram transmissions as they'll have learnt that the amount of data transfer makes them easier to hack - hence return to screen depictions of transmissions. There will be some statement to the effect that the Connies had temporary refits in the war, replacing many science labs with shedloads of torpedoes and the ships themselves will have greater phaser/torpedo abilities than TOS suggested. Cornwall will end with some speech that until they're sure the Klingons are behaving themselves and observing the being-established-neutral-zone, the Connies will stay with these refits (smaller crews too - 200ish like in Pike's pilot), and then be returned to their more exploratory role (400ish crew, TOS weaponry etc) in a few years in time for TOS.
Of course the whole MU stuff will be classified - doesn't ST retain the death penalty for a particular very serious crime in early days? - and there'll be some wordy stuff about the Klingon houses now infighting between the augment and traditional and bald ones, blah blah blah.
Pure speculation of course - just trying to think how they tie up so many loose ends.
