If they hadn't used stuff like "photonic" torpedoes and the like, the canonistas would go "the way these effects look, there's no way these could have realistically evolved into the weapons of TOS+", same goes for your idea of how an atomic battle would go. If they did do that they'd just go "this doesn't look primitive enough to be primitive by Spock's standards and in fact looks BETTER than the TOS effects so it's a canon violation."
As for the use of the Xindi nothing said they DIDN'T exist, like you claim "just because they didn't say it happened doesn't mean it didn't" yet despite that the whole arc was despised.
As for "they had the Klingons/Romulans for that!" odds are if they HAD used them it would cause a BIGGER uproar from the canonistas because "TOS+ Never said that the Klingons or Romulans attacked Earth! Horrific canon violation!", it was enough of a negative reaction when they used a new race for that story so just imagine the negative uproar if they used an established one.
As for the Orions, I doubt anything they could've done would've met with the canonistas approval. I mean they hated the "Orion women are the ones really in charge" plot revelation with a passion so anything resembling your "Humans vs Orions" would've just been met with "TOS never implied any of this!" type ranting.
