Me too! It's tough out there.
You've hit all the obvious ones, so anything I recommend would be farther afield...Futurama - Very funny send-up of sci fi cliches. Not terribly Trek-like but they did a hysterical Trek parody once.
Caprica - Not space opera, no fun space battles or discovering alien worlds. But if you like the exploration of Trek ideas - "what does it mean to be human?" - this might interest you.
There are NO space operas that I've heard of being in production for 2010-11 if you can believe that. The closest I've heard about is a couple of Galaxy Quest type shows about nerds making their own versions of (fictional) cancelled sci fi shows.
. I've already seen Futurama and Caprica is on a pause. All this does is just make me kind of sad. I missed the days. When I could watch several series at a time. I'm so desperate for anything space related that I actually watched ALL Defying Gravity episodes. It thought it was stupid from the second episode but i had nothing else to watch.
Wow. I couldn't even force myself to slog through that awful crap. Some old series like Space: Above and Beyond would be better (wasn't able to make it past the premiere episode but others here can vouch for it.)
Well, there's always V. It has space ships and aliens, even if it doesn't take place in space. It's a serviceable action romp, if a bit soulless and uninspired.
Um... you named pretty much every well-known sci-fi show in the known universe... have you seen Starhunter: 2300? It takes it a while to get going full speed, but I thought it was pretty good. Also, the Sci-Fi "Dune" miniseries was very good. If you haven't read the first three books though, you should skip on the sequel, Children of Dune.
There's always Blake's 7. I've not seen that much of it but what I have seen was pretty good.
"Crusade". There are only 13 episodes but it's not a bad Trek-style show set in the B5 universe.
How about "Red Dwarf"? It's not exactly a "Trek like show", but a science fiction comedy. I do recommend this show though.

I'll throw a curve ball... have you thought about reading? I've been enjoying Alastair Reynold's Revelation Space books, although they're definitely not for everyone. You can get a lot of books from your public library (where I get all of mine), and by the time you read a few, Caprica might be on again. Just an idea for ya.

Earth 2. Space : Above dada da, it's pretty cool. UFO is neat. If you're gonna read go track down Allen Steele's Clarke County, Space , Orbital Decay and Lunar Descent.
Stargate Universe isn't half bad. Seaquest
SV was ok in the first 2 seasons before it got both silly and weird. There's a series starring Andy Griffith called Salvage One that's worth a looksee. But you've mostly covered the good stuff. If you're into animation, Try Ben Ten-lots of scifi concepts utilized well.
