I think it's kind of early to make this list. For starters all new Trek shows will be instantly seen as the greatest Trek ever or the worst Trek ever by many because it's new and people will be super excited just to see new Trek or really angry that it isn't like the old Trek they loved. Still as a Trek fan it's our duty to think and discuss every variable of the show so I will do my part.
TOS: KIrk/Spock/McCoy will most likely keep at number 1 or 2 for just about forever. Nothing in Trek can ever really beat them. Sometimes I do rotate DS9 as my favorite and even TNG but even then I know I prefer Kirk/SPock/MCOy over just about any Trek character or Trek realtionship.
DS9: The most complex of Trek shows. It was ahead of it's time for Trek and it also has not just great characters but tons of them and it took more risks than TNG but it was still playing in the updated universe created by TNG which was fun.
TNG: I think the utopia stuff might not be great drama and might not work for any other show but I do think Pillar found away to make a bad concept work for the most part and I kind of enjoy the future speak of the show. Stewart is Trek's best actor of all-time which makes Picard a great character and I also like how the "canon" we think about with TREK was basically created on this show and it was the first to make the trek universe make some kind of sense.
Orville:


: It's not the greatest drama of all-time or the greatest comedy but I love how the characters are just pleasant people to watch and be around and how it harkens back to TNG I got no choice but to really like it. Maybe I also like it because it a counter balance to the real TREK show so you feel like you can have your cake and eat it to. Only reason I give it slight edge over Discovery Is I am sucker for comedy and it tends to beat out drama in a one on one competition.
Discovery: Love every character other than Burnham and even she is okay. I like how modern it feels and Lorca stands out in particular as a strong and complex character. The spore drive kind of interest me more than the war I got to admit and the new Klingons are very boring so those are a few bad things. Also it's nice to see a show in a alternate universe instead of the old universe of the old shows.
Voyager: Not as bad as people make it out to be. It's basically the Micheal Bay version of what Trek would look like if he was in charge. Well that would be the last couple of seasons anyway. The show does have at least 4 seasons in 1,2,4 and 5 which are about as good as some of your good seasons of TNG.
Enterprise: 2 okay seasons at the end just isn't enough to rank it higher. I kind of like how it also tried to be more modern but it ended up being a watered down version of "modern" since earth had already solved it's main problems so the humans still felt to perfect even if the show was in the past.
TAS: It's weird which is nice and it has some nice designs but the voices don't sound right and they added to much kid stuff for the kids at home who would be watching to make it feel very legit.
