actually, i bet for some holoprograms/holonovels, the holographic characters would have to be able to smell and taste, at least 'holographic' smells and tastes. But aren't holograms, transporters, and replicators related in technology? i bet it wouldn't take much tweaking for them to have 'real' senses of smell and taste. maybe Voyager's EMH doesn't see the need to eat... but I swear i've seen him consuming something over the years (ex: Doesn't the Doctor drink something Endgame. while that's years later, i'm sure he had something at a VOY party or when socializing Seven)
