I know that Spock told the alternate Kirk that in the other timeline his father lived to see him take command of the Enterprise. In the prime timeline did George Kirk attain the rank of Captain himself?

Not in any of the novels I can recall. He was briefly the Enterprise's first officer....or chief of security, I forget which....under Robert April.

Yeah... In Diane Carey's Final Frontier and Best Destiny. The former also mentioned that George Kirk eventually disappeared in deep space, apparently before his younger son even made it into Starfleet. This claim of George Kirk Sr.'s demise in 2250 or thereabouts was also made in Brad Ferguson's Crisis on Centaurus, with a few additional details given. Nobody said anything much about Daddy Kirk's rank during his (supposed) death, though. Carey's books considered him a Commander of some sort (full or Lieutenant, we're not told), but those took place in the early 2240s - so his promotion to Captain would certainly be a possibility.

Doesn't Shatner go into some detail about Tarsus IV in one of his Shatnerverse novels. Didn't his parents get mentioned in that?

Seconded. Or at least some of his parents or other custodians might have died there, as it sounds unlikely he would have been there all by himself, or being looked after by some random grown-ups. (Perhaps his drunkle from STXI was the one to die there? Would explain his relative lack of reaction when confronting Kodos in "Conscience of the King"!)

Diane Carey's books don't go that route, but start with a sullen early teen Jimmy remniscencing about his less than pleasant early space experiences on Tarsus, while George Kirk Sr and Captain April try to show him that space has its positive sides as well. I haven't read any Shatnerverse stuff beyond Ashes of Eden, so I don't know what that "alt-timeline" or "alt-universe" might have done with the Tarsus events...

I think Avenger reveals that Kirk survived the Tarsus incident because he was rescued by Sarek, who in turn helped Kodos escape, and mind-melded with Kirk to make him forget that part.

I'm not making this up, but I do admit to faulty memory on certain details.

I don't doubt any of it. In fact, this being Shatnerverse, I'm pretty sure Kodos was secretly a time-traveling Borg drone converted by the Iotians into a double agent for the Preservers...
