Possible for longer living races to go through all grades?

it's not very likely someone would go from an enlisted man to being a line officer. Could happen but unlikely.

Was it mentioned if Spock ever became an admiral?

the assumption is that rank structure and promotion works the same way as they do now. The officer/enlisted grades have their basis in class structure it seems to me the perfect pod people of the star trek universe would abandon that...

I think the only way an enlisted could become an officer is if they receive a recommendation by their commanding officer to attend Starfleet Academy, where they may (or may not) go through an abbreviated version of the presumed four-year curriculum and receive an ensign's commission afterwards.

Then again, there's the Audie Murphy route, I suppose, but you'd probably need something as big as the Dominion War to pull that off...

They would abandon A LOT of things.
But hey ... Gene did a TV show in the 20th century.
He was limited in just how far he could take it.

doesn't seem like that would be much of a stretch. Besides until Chief O'brien i hadn't even known trek had enlisted personnel.

Remember Chief Brossmer in "The Next Phase" or Simon Tarsese from "The Drumhead"? They were enlisted.

O'Brien stated in "Past Tense pt. 1" that he opted to remain an enlisted man to keep from going to Admirals' Banquets.

nah. I watch the show but i'm not that much of a trek-head to recall minutiae on that level.

there was a 'mustang' in the TNG novels "Q&A" and "Before Dishonour", who started as a grunt and got promoted during the Dominion War (IIRC), but he still hates officers.

Isn't Rand the only person that we know of to go from Enlisted to Officer? I'm only making assumptions but it looks like Rand would have enlisted into Starfleet sometime before the start of TOS maybe starting of at the Grade of Petty Officer 3rd class (don't know if this is possible to start at a Grade this high) and then work her way up to CPO by TMP. It's then assumed that at some point between TWOK and TUC she must've attended a fast track course at the Academy (or something like that) to gain an Officer position where we see her as a Lt Commander in TUC. Again just an assumption but I know some of it has at least been mentioned somewhere.

StarFleet, like much of the Federation, has been described on-screen as an era where people work to be productive and useful citizens.
Not everyone wants to give orders. Likewise not everyone wants to be a follower. Some people don't like the command track while others do.
Others, like me, started out as enlisted but were quickly put in OCS due to ability. However, some are snobs (enlisted as well as officers) who look down upon each other.
O'Brien was proud of his enlisted status. Some are proud of their officer status.
