What world visited by our heroic crews from any of the TREK shows was the most interesting to you and why. And I don't mean Vulcan, or Kronos or Bajor or any major A lister species....in fact, the world could only have been featured once on the show....

planet gateway would be my choice. Be interesting to try to find out who built the gateway and why
 
The planet on "Masterpiece Society" on TNG. These guys are supposed to be so smart, but, they didn't allow for the possibility of solar fragments. What about advancing beyond that Biosphere? Just asking.

The world in "Ensigns of Command" is another interesting world.
 
Rigel VII, featured in The Cage/The Menagerie. Seems like a dangerous place, but I've always been fascinated by its huge moon. Also, the Starbase 11 planet from Court Martial, Deneva from Operation: Annihilate, and even though it's cold, Andoria (I believe we only saw it once in ENT). -- RR
 
Good question. My top favorites would be Kronos, Vulcan and Bajor.

Nah, just kidding.
Seriously, I don't know if this counts, since it's technically not a planet, but the Dyson Sphere is a terribly intriguing idea to me. I know there has been at least one book about it, but I'm just talking canon.

As was mentioned before, the Gateway planet just screams for some in-depth analysis.
