Why would you detach the ship's phasers and main planetary sensor just to give the captain a fancy ride?

Agreed, that is pretty cool. Is it from an episode? I don't recognise it at all

It's someone's home computer CGI project.
 
It's a neat idea if not really needed. I was never big fan of the Galaxy Class Captain's Gig either.

I just don't know why the Captain couldn't have a dedicated shuttle...
 
Well, if you’re going to imagine a Captain’s Yacht on the TOS Enterprise, it’s easy enough to relocate the planetary sensor array and the main phaser banks. But I don’t like the look of the saucer with the yacht detached. It looks like something’s been amputated.

I started work on a TOS yacht once, and came up with the basic idea that they started out as a required warp-capable shuttle for Starfleet ships, back when the fleet's own shuttles couldn't achieve warp.

Most ships used a Vulcan shuttle (the volvo's of the galaxy), but one day some random Captain decides he want's an Andorian Cruiser (i.e. a Ferrari) and the "Captain's Yacht" is born. Over time it just turns into a tradition.
 
Not bad. Has the dome been identified as the sensor array in anything official?
