But surely he wouldn't know what to do to her & even if she told him wouldn't that be a bit weird? But also wouldn't it not be the same texture / shape as one that would work for her biology?

Yes, they should have a nervous system. Since Odo was once human, he should be able to replicate one.
I don't think that's very likely. He knows when he needs to regenerate.Imagine how gross it would be if Odo fell asleep during the act

Also, when he had human sex with the female changeling, they seemed to agree that while it was quite pleasurable, it was nothing close to the Link.
