Whut?!?! Not fed citizens?? They have to send home for food? Aren't there labor unions in the future to protect against this kind of stuff?

Actually, I have no clue. Being smack dab in the middle of nowhere and no vessel construction yards, landing strips or bases visible maybe they are connected somehow to local weather/tornado detection or prevention(we know from TNG("True Q") that by the 2300s Earth has a global weather grid in place that can stop dangerous tornadoes and other phenomena from forming over dry land or dissipate them if they somehow manage to begin)or maybe even related to farming.
 
They remind me of the Cybertron end of the Decepticon Spacebridge.

I think they are Arcoligies-leave maximum land for growing nice natural crops and stack your cities to save space. They would also give Kirk a motivation to leave home- "do want to live in a very big box or fly out into the big empty void?"

I believe they are the shipbuilding structures: drydock. When Kirk is younger there are not many of them. As Kirk gets older they get bigger and more plentiful. As he is looking at The Big E being built, he is older and ready to leave for StarFleet Academy. By the time he is done at Academy the ship is Pike's Enterprise.
Plot progression: as the Enterprise grows to become a starship in space... Kirk grows to become a starship captain. The movie progresses as Kirk grows closer to his destiny as Captain of Enterprise.
 
Even the Dominion on DS9 had ground-based construction plants for ships that were built onto planets as well as asteroids.
