Moments where you knew you were seeing Kirk and not Chris Pine.

I thought Chris Pine did a great job of Kirk, nice touches all the way through THEN he sits in The Chair right at the end as he takes command as Captain, proper, sitting leaning to the side cross-legged.

Good touch eating the apple during the Kobayashi Maru simulation, also.

The real confirming moment for me was when Kirk tried to be charitable towards Nero. And then Spock was happy Nero refused. Kinda confirmed both characters there for me - the bad boy shows the greatness of his soul; the perfect Starfleet officer shows his darker side. Well on their way to well-rounded-characterhood.

Yep...

I bought Pine's portrayal in the bar scene too. Making a bee-line for the prettiest girl in the place and trying to pick up on her is exactly what James T. Kirk would do.

And the way he slapped Cupcake (or was it Cupcake's friend) in the face, when he said "so get some more guys and then it'll be an even fight".... that little slap in the face was VERY kirkish.

Kirk: We have to assume that every Federation planet is a target.
Spock: Out of the chair ...

Kirk: I don't believe in no-win scenarios.

- The Kobayashi Maru, eating that apple.
- The moment he swaggers onto the Bridge at the end.
- The scene with Kirk and Gaila in Uhura's quarters.

The way I saw the movie, he slowly grew into the role, and maybe that was the point since we weren't really seeing "Shatner-Kirk" yet but rather the "Proto-Shatner-Kirk". The more the movie went along, the more he began to feel like the Kirk I grew up watching. I do agree that the "seal the deal" moment was the end bridge scene. He was clearly doing his hardest to channel the Shat in that scene and it worked well without being a parody.
This is exactly my experience as well.

It was definately Cupcake.

Kirk: Relax Cupcake, it was a joke !!!
Cupcake: In case you haven't noticed, there are 3 of us, and 1 of you.
Kirk: Well bring on 3 more, and it'll be an even fight !!!

Cue Trouble with Tribbles brawl cue ...

I thought the very end of the movie when Kirk came onto the bridge, yellow tunic on that's when he finally fell into the Shatner trap
