Let me preface this post by saying this is just a theory, and I'm not even sure I think this myself, but...
...Maybe Abrams is going to pull a "M. Night Shyamalan"-style surprise ending, with Shatner appearing as Kirk, back from the dead. If those AICN rumors were right -- and this is about Old Spock dealing with altered timelines -- maybe at the end of the film, when Nimoy's Spock returns to the 24th century (?), he will find Shatner's Kirk alive and well, and living in a post-Geneartions 24th century (maybe in the new timeline he moved out of the way before the bridge crushed him on Veridian.)
Maybe this whole "Shatner isn't in this" saga is just a ruse and when we go to the theaters on Christmas 2008, we will be shocked and surprised to see Shatner make an appearance at the end. I suppose they could possibly film the "secret ending" with just Nimoy and Shatner and minimal film crew (to avoid too many people from knowing about it).
Like I said, I don't know if this (or a similar story) will happen -- or even if they could pull it off secretly -- but it could be really good if done correctly.
