IF he is doing Wolverine for a while longer, I won't hold it against him that he said he was done after Logan. Nimoy was done with Spock, but changed his mind after a while. Why can't Jackman?

Yes, but they've chosen to keep that much secret for now. According to Kevin Fegie, there are 52 characters. However, they've only announced about 20. SDCC is this month, and D23 is next month. If they don't plan on keeping the rest of the cast secret until the film is released, they will announce them at SDCC or D23. Marvel Studios will be attending SDCC this year unless they change their minds.
