I remember the extended editions having great maps of Middle-earth, showing the characters journeys across it; I sold the DVDs boxset years ago but wish I had saved the artwork. Anyone know if they are online?

They are now. I could do a lot better if I had a scanner. The new phone takes some pretty big pix, but it's hard to get it framed well.

If they aren't Tolkein originals, they were definitely copied from the originals.
I had early copies of The Silmarillion & Unfinished Tales that came with large, fold-out maps of Middle Earth before and after the world was broken.

At best, they were probably worked on by Alan Lee and John Howe for the larger, detailed scale.
