Another reason why would not want to use the high-backed variant could be that it would obstruct his view of his surroundings.

one of the things that makes the classic series bridge so amazing is how actually efficient it is. the captain can, with a modicum of movent, see every display screen and workstation on the bridge, giving him a gread deal of command information. the high back would necessitate him completely turning the chair to see the communication station and parts of the science station. with Kirk's regular chair he only has to tunr his head and swivel the chair a slight amount (watch TOS closely and you'll see him do it many times).

They put the high back back on for Commodore Wesley on the Lexington. Wesley should be revisited at an eariler age in Star Trek 12.

As kids my brother and I used to wonder how the Mirror captain's chair wound up on the Lexington...

The design of TOS is..well...logical -when they redesigned the bridge for the movies, they HAD to put sciences directly behind Kirk - it makes no sense operationally, but this way Nimoy gets to be in the same shot with Shatner!
