^ Yes, it was "Unity" that had people who were assimilated during the battle. When that occurred we don't know. It might not have been until after the battle was over. The cube goes off to continue its marry journey and leaves a sphere to pick through the remains of ships for survivors. Or maybe they were unlucky and their escape pods were scooped up.
The Saratoga had a bit of an unusual death. We saw five seconds before the Borg blow the crap out of an Excelsior in two seconds flat and yet with the Saratoga they leisurely trap it, overload it and just let it sit around for a while and then blow it up. Obviously it was done for story purposes so Sisko could save his son, see his wife dead and get dragged kicking and screaming to safety but it would allow for enough time for the Borg to board and kidnap a few people before they blew it up. Why would they do that? I don't know. Maybe they detected a species they had yet to assimilate and took the time to grab a sample before dealing the killer blow.
If the Borg could reanimate dead people then Picard killing a member of his crew in "First Contact" was rather pointless and if he really wanted to spare him Picard would have vaporised the guy. Plus if the Borg could assimilate the dead into drones wouldn't Picard know that in his freaky Borg-sense of his?
