Thranduil, King of Mirkwood, has a somewhat prominent role in The Hobbit. I also wouldn't be surprised if they got Orlando Bloom to cameo as Legolas, Thranduil's son.
And the Dwarves did take a stand against Sauron, it's just their part in the war happened away from the Fellowship's notice. They and the Men of Dale fought against Sauron's forces in the north at the Lonely Mountain, while the Elves of Mirkwood and Lothlorien fought another army in southern Mirkwood.
