There’s nothing precluding Spock and Chapel being a couple or married in-between TOS and the movies, or after The Voyage Home.
I can’t see the Spock of The Motion Picture being with Chapel, especially when he’s been trying to purge the rest of his emotions (arguably, you could retcon that maybe a bad breakup is what caused him to pursue the Kolinahr). And since you would think she would be in the conversation for some of the stuff during Spock’s death, and part of the planning to get his body to Vulcan, I can’t see Chapel being with him during 2 through 4.
But anything after The Voyage Home is arguably open territory, since we know so little about the crew’s personal lives. It’s canon that both Sulu and Chekhov had families, but you’d never know it by what we saw on-screen. So it’s possible that the Spock of The Undiscovered Country is married to Chapel and goes home to her after the final scene for all we know.
