We'd probably all do exactly what the people in Trek would do if it was realistic, use it to have lots of sex with various ridiculously attractive holo-women and probably need reconstructive penis surgery by the time we came out.
I'd hate to have to clean a holodeck if they were real...

I'd probably play various characters in the Lord of the Rings or the Star Wars universe.
Would nobody want to be their (completely harmless) Original Character (well, Mary Sue) in their favourite tv-show/movie/book? I'd do incredibly embarrassing stuff like singing in a musical or something of the sort. Or... discussing politics and destiny with Peter Petrelli!
