I think it's an interesting twist to how we see his life begin, calling someone "Admiral Pointy Ears." Through the time he's captain of Enterprise, you can feel his exasperation with many Vulcans, and it shows by the end of season two when he makes a Vulcan-like decision about the Cogenitor how full circle he has become.
The Vulcan he's involved with should be Vulcan though -- non-emotional and logical. I think that would add another interesting writing layer to his character; Archer is sometimes logical and reasonable and sometimes relies on his emotions to make a decision. And assuming Vulcans don't rush into things (being slow to change and long-lived enough to experience life for a long time), I think it shouldn't be as a "lover," but more as a relationship ... possibly at the end of Enterprise.
I think it would also quite elegantly summarize why the Vulcans and humans are such good friends in TOS with Kirk and Spock, for example.
