Given that the New E wasn't commissioned until 25 years after the loss of the Kelvin, it would seem unlikely that Starfleet hadn't commissioned new ships in the interim.
In 2233, the Constitution class would have been in the concept and design stage and while SF would have had the telemetry and data from the Kelvin, it would not have been analyzed and interpreted fully for years to come.
SF would have to recognize the need for intermediate improvements in the fleet which they had on the drawing board.
So, it's possible that the Enterprise we knew is out there, but under a different registration and name.
I like to think so anyway.
