I thought Sulu was born in 2237 not 2229. The Okuda Chronology has 2237. Nothing to contradict it as of yet. And George Takei was born in 1937. If you added 300 years to that, it would be 2237. Which is probably where they got the date from.
So I think my solution works.

I'm going by the Okuda Chronology. I also added an explanation for where they probably got the date from. Mike Okuda couldn't have known about the Kelvin Films in 1993, when the Star Trek Chronology was published, unless he has some hidden powers we don't know about.
