Man, this is a tough one. If you killed off Ezri, Dr Bashir would lose out on his piece of ass, and I would feel bad for him.

But, if we're going to do this, I would kill her off by having her fall down the turboshaft, then having the turolift come down and crush her to pulp.

I'd kidnap her, haul her butt to the Bajoran shrine and have her switch places with Jadzia just before Dukat shows up. And then remove the head, as has been suggested. Just to make sure.
