I see that nobody has mentioned it, so I will:
Data's Day.
This is one of my favorite TNG episodes because it's the only Trek episode that I can remember that was simply a day in the life.
There was the Romulan subplot, but it was fairly relaxed compared to most situations.
I always thought Trek should have more "day in the life" type episodes. These episodes could've been balanced by having diplomatic drama in the background, furthering whatever overreaching arc they're working on.
