I was just thinking of the ENT episode Twilight, where in an alternate reality the Xindi manage to destroy Earth in 2153, along with other human colonies such as Mars, Vega Colony and Alpha Centauri. And by the end of the episode they've hunted down the rest of the ragtag survivors at Ceti Alpha and are out for the kill.
So let's just say if that timeline continued, they've destroyed Enterprise and the other ships, and obviously kill everyone on the planet... so job done, humanity extinct.
But I was thinking, just for fun actually what other vestiges of humanity and other "Earthlings" would still remain out in the galaxy from what we know from other Trek incarnations? Whether they be people or evidence of mankind.
Three off the top of my head-
-Zefram Cochrane would still be out there with the Companion in the Gamma Canaris region
-The Voth in the Delta Quadrant you could say are technically Earthlings
-The 37s and their ancestors again in the Delta Quadrant
I can think of a few others but I'll pass it over for now
